Dipped in dark chocolate or finished with a sugar glaze, they are the treat of every birthday party and coffee break in the country.

The cookie crumbles delicately the moment you bite it, giving way to a thick, silky ribbon of dulce de leche, while the chocolate shell snaps cleanly. The contrast of sandy cookie, sticky caramel, and firm chocolate is the texture trifecta that made alfajores famous.

Step by stepInstructions

  1. Cream the butter and sugar together until light and fluffy, then beat in the egg yolks and vanilla.
  2. Stir in the flour, cornstarch, baking powder, and salt to make a soft, sandy dough; gather into a disc, wrap, and chill for 30 minutes.
  3. Preheat the oven to 350°F and line two baking sheets with parchment.
  4. Roll the dough to 1/4-inch thick on a floured board and cut into 2 1/2-inch rounds, rerolling the scraps.
  5. Bake for 10 to 12 minutes until the edges are just golden — the cookies should stay pale; cool completely on the sheets.
  6. Sandwich the cookies in pairs with a generous teaspoon of dulce de leche, pressing gently so it oozes to the edges.
  7. Melt the chocolate in a bowl over simmering water or in short microwave bursts, then dip each alfajor halfway and set on parchment to firm up.
