It is the centerpiece of Viennese coffee-house culture, served warm with a snowfall of powdered sugar, and the art of stretching the dough until you can read a newspaper through it is a point of Austrian pride. This version uses the traditional method — and a store-bought filo shortcut is a fine Plan B.

Step by stepInstructions

  1. Mix the flour, salt, egg, water and 1 tbsp of the oil into a soft dough. Knead 8–10 minutes until smooth and elastic, brush with the remaining oil, cover and rest 30 minutes.
  2. Preheat the oven to 375°F. Toss the apples with the sugar, cinnamon and raisins.
  3. On a floured cloth, roll the dough as thin as possible, then gently stretch it with the backs of your hands until nearly translucent.
  4. Brush the dough with melted butter and sprinkle with breadcrumbs.
  5. Spread the apple filling along one long edge and roll the strudel up tightly, tucking in the ends.
  6. Place seam-side down on a buttered baking sheet, brush with more butter and bake 35–40 minutes until deep golden.
  7. Dust with powdered sugar, slice and serve warm.
