Buñuelos are Bolivia’s beloved fried-dough snack, especially at Carnival and during Holy Week, when they are dunked into steaming api or drizzled with honey. Made with flour, egg, and a hint of anise, they are the kind of simple treat that disappears fast.

Fried Dough, Holiday Style

Inside each golden, craggy puff is a soft, tender crumb perfumed with anise — crisp edges, pillowy middle. Rolled in sugar or soaked in honey, they are dangerously easy to eat by the handful.

Step by stepInstructions

  1. Whisk the flour, baking powder, salt, sugar, and anise in a bowl.
  2. In another bowl, mix the eggs, warm milk, melted butter, and vanilla, then pour into the dry ingredients and stir into a soft, sticky dough; rest for 30 minutes.
  3. Heat the oil to 350°F in a deep pot.
  4. Drop tablespoons of dough into the oil, or shape rings by hand, and fry for 2 to 3 minutes per side until puffed and deep golden.
  5. Drain on paper towels, toss in sugar or drizzle with honey, and serve warm.

💡 Chef tips & storage

Do not overmix the dough — lumps are fine and make for lighter buñuelos. They are best warm; leftovers revive in a 350°F oven for 5 minutes.
