Arroz Guatemalteco - Guatemalan cuisine

A traditional Guatemalan dish — Arroz Guatemalteco is the golden, tomato-tinted rice that appears beside nearly every main course in the country. The grains are toasted in oil, then simmered with a fresh tomato-onion purée, peas, and carrots until each one is separate and glossy. Simple, fragrant, and endlessly comforting, it is the backbone of the Guatemalan table.

Perfect rice is the foundation here — our How to Cook Perfect Rice Every Time covers ratios, rinsing, and resting.

Step by stepInstructions

  1. Heat the oil in a heavy pot and toast the rice over medium heat, stirring, until the grains turn milky white and smell nutty, about 5 minutes.
  2. Add the onion and garlic and cook for 2 minutes, until soft and fragrant.
  3. Stir in the tomato purée and cook for 3 minutes, until the rice is tinted orange and the purée thickens.
  4. Add the broth, salt, peas, and carrot; bring to a boil, then reduce the heat to low, cover, and cook without lifting the lid for 18 to 20 minutes.
  5. Remove from the heat, scatter the cilantro over the top, cover again, and let rest for 5 minutes.
  6. Fluff with a fork and serve hot.

💡 Chef tips & storage

Resist the urge to stir once the lid goes on — stirring breaks the grains and makes the rice gummy. For extra color, add a spoonful of achiote to the oil at the start.
