Tomatoes, onion, and garlic are charred until blistered, then chopped and tossed with cilantro, lime, and salt. Chunky, bright, and a little smoky, it is the essential companion to grilled meat and warm tortillas.

  1. Char the tomatoes, onion, garlic, and chile on a hot griddle or under the broiler, turning, until the skins blister and blacken in spots.
  2. Peel the garlic, then chop everything into a chunky salsa — do not blend it smooth.
  3. Stir in the cilantro, lime juice, olive oil, and salt; taste and adjust.
  4. Let the chirmol rest for 15 minutes so the flavors come together.
  5. Serve with grilled steak, chicken, or chorizo, and warm tortillas.

Chop, do not blend — chirmol's charm is its chunky texture. The longer it sits, the deeper the smoky flavor gets, so make it an hour ahead if you can.
