The lamington is said to have been created in the late 1890s in the kitchen of Lord Lamington, Governor of Queensland, when his chef made an impromptu treat from leftover sponge cake, chocolate icing, and coconut for unexpected guests — or so the story goes, and Australians have never felt the need to question it. Within decades it had become a national institution, served at every school fete, church fundraiser, and Australia Day barbecue, with the day before the national holiday affectionately known as National Lamington Day.

What makes it great is the perfect balance of textures: an airy, buttery sponge soaked just enough with rich chocolate icing, all wrapped in a snowy coat of desiccated coconut that adds a gentle chew. It’s the ideal afternoon-tea sweet — not too rich, not too sweet, and dangerously easy to eat three of while pretending you’ve only had one.

Step by stepInstructions

  1. Preheat the oven to 350°F and grease and line a 9-inch square cake tin.
  2. Beat the eggs, sugar, and vanilla with an electric mixer for 5 to 6 minutes, until thick, pale, and tripled in volume.
  3. Fold the sifted flours through the egg mixture in three additions, then gently fold in the melted butter.
  4. Pour the batter into the tin and bake for 25 to 30 minutes, until the top springs back; cool in the tin for 5 minutes, then turn out onto a wire rack and cool completely.
  5. For the icing, whisk the icing sugar, cocoa, boiling water, and softened butter until smooth and glossy, with the consistency of thin cream.
  6. Cut the cold cake into 16 squares, then dip each square into the chocolate icing, coating every side, and roll in the coconut.
  7. Set the lamingtons on a wire rack and let the icing set for at least 1 hour before serving.

💡 Chef tips & storage

The cake must be completely cold — even better, a day old — so it holds together when dipped. Use your hands for the final roll in coconut to make sure every side is covered; the icing sets quickly, so work in batches.
