The meat pie has been part of Australian life since the colonial era, when British settlers brought their love of pastry to the new continent, but it really came into its own during the gold rushes of the 1850s as the portable lunch of diggers and working men. By the 20th century, bakeries and pie carts like Sydney’s famous Harry’s Cafe de Wheels had turned it into an institution, and today it is widely called Australia’s unofficial national dish, chanted about at the footy and sold by the millions every year.

What makes it great is that perfect contrast of textures: a flaky, buttery puff lid, a sturdy shortcrust base, and a deeply savoury filling of tender beef in a thick, glossy gravy that holds its shape when you bite in. It’s comfort food in one hand, best eaten piping hot with a squirt of tomato sauce and, if you’re brave, held upside down without a single spill.

Step by stepInstructions

  1. Toss the beef cubes in the flour, salt, and pepper, then brown them in batches in the oil over high heat until deeply coloured; set aside.
  2. In the same pot, soften the onion and garlic, then stir in the tomato paste and cook for 1 minute.
  3. Return the beef to the pot, pour in the stock and Worcestershire sauce, and simmer gently for 1 1/2 to 2 hours, until the beef is tender and the sauce is thick enough to coat a spoon; season and cool completely.
  4. Preheat the oven to 400°F and line four 4-inch pie tins with the shortcrust pastry, trimming the edges.
  5. Divide the cooled filling between the tins, then top with puff pastry lids, pressing and crimping the edges; cut a small steam vent in each lid.
  6. Brush the tops with beaten egg and bake for 25 to 30 minutes, until the pastry is puffed and deep golden. Rest for 5 minutes before serving with tomato sauce.

💡 Chef tips & storage

The filling must be completely cold before it goes into the pastry, or the bases will go soggy. For a true hand-held pie, let it cool for a full 10 minutes — the gravy sets as it cools and won't drip down your shirt.
