Moreton Bay bugs, also known as bay lobsters or flathead lobsters, are a flat, sand-coloured crustacean found along Australia’s northern and eastern coastlines, and they take their name from the famous bay that opens onto Queensland’s capital. They have been a treasured local catch for generations, and while they were once a humble trawler’s bycatch, they are now one of the most prized items on Australian seafood menus and Christmas tables, celebrated for meat that rivals the finest lobster.

What makes them great is the flesh: sweet, succulent, and delicately flavoured, with a firm, juicy texture that takes beautifully to a hot grill or barbecue. Split down the middle, brushed with garlic butter, and finished with lemon and a whisper of chilli, they’re a dazzling centrepiece that tastes of summer holidays and seaside restaurants — and they cook in minutes.

Step by stepInstructions

  1. Preheat a barbecue grill or heavy grill pan to high heat and brush the bug tails with olive oil, seasoning the cut flesh with salt and pepper.
  2. Stir the garlic, chilli, and lemon juice into the melted butter and keep warm.
  3. Place the bug tails cut-side down on the grill and cook for 2 to 3 minutes, until lightly charred.
  4. Flip them over, brush generously with the garlic butter, and grill flesh-side up for a further 3 to 4 minutes, until the meat is opaque and just cooked through.
  5. Transfer to a serving platter, spoon over the remaining garlic butter, and scatter with parsley.
  6. Serve immediately with lemon wedges and plenty of crusty bread to mop up the juices.
