Sausage rolls sailed to Australia with the British, who had enjoyed their own versions for centuries, but in the new country they were quickly claimed and reinvented. By the mid-20th century they had become the default offering in every Aussie bakery, school canteen, and party platter, alongside their cousin the meat pie, and they remain one of the country’s most beloved savoury pastries.
What makes it great is the same magic as a pie but in a friendlier, finger-food form: buttery puff pastry that shatters, wrapped around a savoury, herby filling that stays juicy through the bake. Straight from the oven, cooled in a lunchbox, or reheated the next day, they are impossible to stop at one — especially with a generous dollop of tomato sauce.
