It’s a dessert that demands to be eaten with a fork, preferably standing at the bakery counter or straight from the fridge — messy, nostalgic, and utterly irresistible.

Step by stepInstructions

  1. Preheat the oven to 400°F. Place the pastry sheets on a baking tray, prick them all over with a fork, and bake for 12 to 15 minutes until puffed and golden; cool completely.
  2. Whisk the milk, cream, sugar, cornflour, vanilla, and egg yolks together in a saucepan until smooth.
  3. Cook over medium heat, whisking constantly, for 5 to 7 minutes until the mixture thickens to a very stiff custard; remove from the heat, whisk in the butter, and cool for 10 minutes.
  4. Trim each pastry sheet to a neat rectangle and place one in the base of a lined 8-inch square dish.
  5. Spread the custard evenly over the pastry, top with the second pastry sheet, and chill for at least 4 hours, until completely set.
  6. Mix the icing sugar with the boiling water and a drop of pink colouring to a thick, spreadable glaze, and pour it over the top pastry, smoothing to the edges.
  7. Chill for 30 minutes, then slice into squares with a sharp knife and serve cold.

💡 Chef tips & storage

The custard must be genuinely stiff before it goes between the pastry, or the slice will turn into a puddle — cook it until it's almost too thick to stir. Chill overnight if you can; the layers set together and slice cleanly.
