Avgolemono Soup — silky Greek egg-lemon chicken soup with rice

Avgolemono is the soup that tastes like a hug: silky chicken broth thickened with eggs and brightened with lemon until pale gold and creamy — no cream in sight. Tender rice and shreds of chicken make it a complete, soothing bowl.

This classic is a Greek family staple, often served when someone needs comforting, and it appears on many Easter tables. Serve warm with plenty of black pepper and a squeeze of extra lemon.

Step by stepInstructions

  1. Place chicken, onion, carrots, celery, salt, and water in a large pot. Bring to a boil, skim the foam, then reduce heat and simmer until the chicken is tender, about 40 minutes.
  2. Remove the chicken; shred the meat and discard skin and bones. Strain the broth and return it to the pot; keep warm.
  3. Add the rice to the broth and simmer until tender, about 15-18 minutes.
  4. In a bowl, whisk the eggs with the lemon juice until frothy. Slowly ladle about 1 cup of hot broth into the egg mixture, whisking constantly to temper it.
  5. Off the heat, slowly pour the egg-lemon mixture into the pot, stirring constantly. Return the shredded chicken.
  6. Warm gently over low heat, stirring, until slightly thickened — do not let it boil. Season with salt and pepper and serve immediately.

💡 Chef tips & storage

Temper the eggs slowly so they don't curdle — whisk constantly as you add the hot broth. Reheat leftover soup very gently over low heat, never boiling, or the egg will scramble.
