Bakeapples grow low to the ground in the mossy barrens of Atlantic Canada, and picking them is slow, back-bending work — which is why a jar of this jam costs what it does. The berries ripen to a glowing amber and taste like a cross between raspberry and honey, with a tartness that keeps you coming back.

Cooked with sugar and a squeeze of lemon, they become a jam that Maritimers guard jealously, spooning it over toutons, toast or ice cream. Every jar is a little piece of the barrens, preserved in gold.

Step by stepInstructions

  1. Pick over the bakeapples and rinse them gently in cold water, draining well.
  2. Place the berries in a heavy pot with the water and simmer for 5 minutes until they soften and release their juice.
  3. Add the sugar and lemon juice and stir until the sugar dissolves completely.
  4. Boil the jam gently for 20 to 25 minutes, skimming any foam, until it thickens and sheets off a cold spoon.
  5. Pour into sterilized jars, seal, and cool before storing in the fridge.
