  2. In another bowl, whisk the eggs and sugar until pale, then whisk in the coconut milk, water, pandan extract, and oil.
  3. Pour the wet ingredients into the dry and whisk until smooth. Stir in the baking powder.
  4. Cover the batter and let it rest for 30 minutes.
  5. Preheat the oven to 375°F and grease a 9-inch round cake pan generously with oil.
  6. Pour the batter into the pan and bake for 25 to 30 minutes, until the top is deep golden and a skewer comes out clean.
  7. Cool the cake in the pan for 10 minutes, then turn out and slice thick. Serve warm or at room temperature.
