Beef brisket is simmered for hours with daikon, ginger, star anise, and soy until it is almost sweet, and the daikon soaks up the broth like a sponge. It is a slow soup, the kind that rewards patience and tastes even better the next day. Skim the broth as it simmers to keep it clear.

The broth is deep and gently spiced, with the star anise and soy giving it a rounded savor, while the daikon turns translucent and silky. The brisket should be just shy of falling apart, and the noodles springy to balance all that softness.   1. Blanch the brisket in boiling water for 5 minutes; drain and rinse.
  2. Heat the oil in a large pot and brown the brisket in batches until deeply colored.
  3. Add the ginger, scallions, star anise, cinnamon, soy sauces, sugar, and Shaoxing wine, then the stock. Bring to a boil, skim, and simmer covered for 1 1/2 hours.
  4. Add the daikon and simmer 30 minutes more, until both the meat and radish are tender.
  5. Cook the noodles in boiling water for 1 to 2 minutes and divide among 6 bowls.
  6. Ladle the brisket, daikon, and broth over the noodles. Serve with chili oil on the side.
