Step by stepInstructions

  1. Whisk the lime juice, oil, garlic, cumin, chili powder, salt, and pepper. Marinate the steak at least 2 hours.
  2. Heat a grill or cast-iron skillet to high. Cook the steak 3-4 minutes per side for medium-rare. Rest 5 minutes, then slice thin against the grain.
  3. Char the peppers and onion in the same pan until tender and lightly blackened, about 5 minutes.
  4. Serve the steak with the vegetables, warm tortillas, and all the fixings.

💡 Chef tips & storage

Marinate the steak at least 2 hours (overnight is better) and slice it against the grain — that's the secret to tender fajitas. Serve with warm tortillas and lime.
