It was born in the Black Forest region, where cherries and kirsch are abundant, and it has been a celebration cake since the early 20th century. It is impressive, delicious, and entirely achievable at home.

  1. Preheat the oven to 350°F and butter two 9-inch round pans. Whisk the flour, cocoa, baking powder and salt.
  2. Cream the butter and sugar until light, then beat in the eggs one at a time.
  3. Fold in the dry ingredients alternately with the buttermilk. Divide the batter between the pans and bake 25–30 minutes until a skewer comes out clean. Cool completely.
  4. Whip the cream with the powdered sugar and vanilla to stiff peaks.
  5. Split each cake layer in half. Sprinkle the cut sides with kirsch.
  6. Layer: cake, cream, cherries, cake — finishing with cream on top and sides.
  7. Coat the outside with the remaining cream and press chocolate shavings around the sides.
  8. Chill at least 4 hours before slicing.
