Boerenkool

Boerenkool, or kale stamppot, is the Dutch answer to a cold, gray winter day: potatoes and curly kale mashed together until silky, crowned with a slice of smoked rookworst and a ladle of gravy.

It is a long-loved, budget-friendly family meal in the Dutch kitchen, served straight from the pot. For the best texture, cook the kale with the potatoes and mash by hand rather than in a food processor.

Step by stepInstructions

  1. Put the potatoes and kale in a large pot with 1 cup (240 ml) water and a little salt; bring to a boil, cover, and cook about 25 minutes, until the potatoes are tender.
  2. Drain well and return to the pot over low heat for a minute to steam dry.
  3. Add the hot milk, butter, salt, nutmeg, and pepper, and mash until creamy but still slightly textured.
  4. Meanwhile, simmer the rookworst in water for about 10 minutes and warm the gravy.
  5. Serve the boerenkool with sliced sausage and a ladle of gravy.
