Andijviestamppot is the Dutch weeknight classic: creamy mashed potatoes folded through with crisp raw endive, so the green stays bright and just barely warm. A well of gravy and a thick slice of smoked sausage turn it into the coziest one-plate dinner going.

It belongs to the stamppot family, the Dutch tradition of mashing potatoes with vegetables and serving them as a single hearty plate. Eat it straight from the pan — and always keep the endive raw for that fresh, slightly bitter snap.

Step by stepInstructions

  1. Put the potatoes in a large pot, cover with cold salted water, and bring to a boil. Cook for about 20 minutes, until fork-tender.
  2. While the potatoes cook, shred the endive and set it aside.
  3. Drain the potatoes well, return them to the pot over low heat for a minute to steam dry, then mash with the hot milk, butter, salt, nutmeg, and pepper.
  4. Fold in the raw endive — it should wilt only from the potato's heat, staying bright and slightly crunchy.
  5. Meanwhile, simmer the rookworst in water for about 10 minutes. Serve the stamppot topped with sliced sausage and mustard, with gravy if you like.

💡 Chef tips & storage

Do not cook the endive — the residual heat of the potatoes is enough. Remove the tough white core of the endive before shredding for a milder bite.
