The bolón de verde is Ecuador’s great plantain invention: green plantains boiled, mashed, stuffed with chicharrón or cheese, and fried into crackling golden spheres. Born on the coast, it is now the breakfast of the nation, eaten with coffee, yogurt, or a fried egg.
Crackling outside, soft and savory inside
The exterior fries to a deep golden crunch while the inside stays soft, warm, and slightly chewy, punctuated by salty nuggets of pork or strands of melted cheese. The contrast of crisp shell and tender center, with a gentle plantain sweetness underneath, is pure comfort.
