Navy beans slow-baked with molasses, salt pork, and mustard until deeply sweet and tender.

The original Boston classic — beans baked low and slow in molasses until the sauce turns dark, glossy, and almost caramelized.

Step by stepInstructions

  1. Soak the beans in cold water overnight; drain.
  2. Simmer the beans in fresh water until tender, about 1 hour; drain, reserving 2 cups of the liquid.
  3. Preheat the oven to 300°F. Put the onion in the bottom of a bean pot, add the beans, and bury the salt pork among them.
  4. Stir the molasses, brown sugar, mustard, pepper, salt, and reserved liquid together and pour over the beans.
  5. Cover and bake 4-5 hours, checking occasionally and adding water if dry. Uncover for the last 30 minutes to thicken the sauce.

💡 Chef tips & storage

The slower and lower you bake, the better the beans. They're even better reheated the next day — plan for leftovers.
