Bourekas

Bourekas arrived in Israel with Sephardic and Balkan Jewish immigrants and became the bakery snack of the nation. Puff pastry parcels stuffed with salty cheese, mashed potato, or spinach, they are sold warm on every street corner and eaten for breakfast, lunch, and everything between. A good boureka is golden, puffed, and shiny with egg wash, scattered with sesame seeds, and best eaten with your hands.

  1. Preheat the oven to 375°F. Line two baking sheets with parchment.
  2. Mix the feta, mozzarella, egg, dill, and pepper in a bowl until well combined.
  3. Roll the puff pastry slightly thinner and cut into 4-inch squares.
  4. Place a spoonful of filling in the center of each square. Fold corner to corner into a triangle and press the edges with a fork to seal.
  5. Arrange on the baking sheets, brush with the egg wash, and sprinkle with sesame seeds and flaky salt.
  6. Bake until deep golden and puffed, 25 to 30 minutes. Serve warm.
