Pirozhki

Pirozhki are small, golden hand pies — pillowy yeast buns hiding savory or sweet fillings. Stuffed with cabbage, potato, or meat, they are the portable comfort food of Russian street corners and grandmothers’ kitchens alike.

Fresh from the oven, brushed with butter, pirozhki are impossible to resist. They are baked for picnics, tea, and school lunches, and are best enjoyed warm, with tea or a glass of cold milk.

Step by stepInstructions

  1. Dissolve the yeast and sugar in the warm milk and let it foam for 10 minutes.
  2. Mix in the flour, salt, 1 egg, and butter; knead into a soft dough, cover, and let rise for 1 hour.
  3. Meanwhile, sauté the onion and cabbage in oil until soft and golden; season and stir in the boiled eggs.
  4. Punch down the dough, divide into 14 pieces, and flatten each into a disc.
  5. Fill each disc, pinch the edges into a seam, and place seam-side down on a baking sheet; cover and rise for 30 minutes.
  6. Brush with the egg yolk and bake at 375°F for 20-25 minutes until deep golden; brush with butter while still warm.

💡 Chef tips & storage

Seal the seams well or the filling will leak. Brushing the warm buns with melted butter keeps them glossy and tender for hours.
