Plump, juicy Swiss-style bratwurst—made with pork, veal, and a hint of milk and nutmeg—are browned in butter until deeply golden, then nestled in a silky onion gravy. It is a plate of pure, unfussy satisfaction.

Across Switzerland, sausages like these are a grill-and-pan staple, often served with crispy rösti or boiled potatoes and a swipe of sharp mustard. Weekend lunches just got a new favorite.

Step by stepInstructions

  1. Melt the butter in a large skillet over medium heat. Add the sausages and brown on all sides, about 8 minutes. Transfer to a plate.
  2. Add the onions to the skillet and cook, stirring, until soft and golden, about 8 minutes.
  3. Sprinkle in the flour and stir 1 minute. Pour in the broth and cream, scraping up the browned bits, and add the caraway, mustard, salt, and pepper.
  4. Return the sausages to the pan, cover, and simmer gently 10 minutes until cooked through.
  5. Scatter with parsley and serve with rösti or boiled potatoes.

💡 Chef tips & storage

Prick the sausages lightly before browning so they do not burst, then simmer them in the gravy to finish cooking. The sauce is wonderful spooned over rösti.
