- Heat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small pot, melt the butter with the molasses, water and vanilla over low heat, stirring until smooth; cool slightly.
- Whisk the flour, baking soda, baking powder, ginger, nutmeg, cinnamon and salt together in a bowl.
- Pour the molasses mixture into the dry ingredients and mix into a stiff, slightly sticky dough.
- Divide into 6 to 8 balls and flatten each into a round about ½ inch (1 cm) thick; place on the lined sheet.
- Score a cross or lines on top of each bulla and bake for 20 to 25 minutes, until firm to the touch.
- Cool on a rack; serve with ripe avocado, the classic pairing, or with sharp cheese.
💡 Chef tips & storage
Bulla should be dense and chewy, not cakey — do not expect it to rise much. Store in an airtight tin; it keeps for a week and gets slightly softer with time.
