Fa’ausi is the dessert that shows up at every Samoan celebration, from church fundraisers to family birthdays. It is made by simmering coconut cream and brown sugar into a thick, amber caramel, then pouring it over cubes of bread or boiled taro. The name comes from the Samoan word for the bubbling, sputtering sound the sauce makes as it cooks — a sound that means something wonderful is on the way.

What makes it great: the coconut caramel is the star — deeply toasty, nutty, and sweet, with the richness of coconut shining through.
