Caribou have roamed the barrens of Newfoundland and Labrador since long before anyone kept a written record, and for the people of Labrador — and the hunters of the island’s interior — caribou meat was the staff of life. It was dried for the winter, roasted for celebrations and simmered in stews that carried families through the cold months. A pot of caribou stew, dark and rich from long cooking, is the taste of the Big Land itself.

What makes it great is the meat’s deep, wild flavour — leaner than beef, with a clean, almost sweet richness that needs only time and a little fat to shine. Simmered slowly with onions and root vegetables, the caribou becomes meltingly tender and the gravy turns dark and glossy. Serve it over boiled potatoes or with a chunk of crusty bread, and you’ll understand why hunters plan their whole fall around filling the freezer.

Step by stepInstructions

  1. Toss the caribou cubes in flour seasoned with salt and pepper, shaking off the excess.
  2. Heat the oil in a heavy pot over medium-high heat and brown the meat in batches until well coloured on all sides.
  3. Add the onions and cook until soft, scraping up the browned bits from the bottom of the pot.
  4. Pour in the stock and add the thyme and bay leaf, then cover and simmer gently for 1 1/2 to 2 hours until the meat is tender.
  5. Add the carrots, turnip and potatoes and simmer for another 25 to 30 minutes until the vegetables are soft.
  6. Season to taste and simmer uncovered for a few minutes if you like the gravy thicker.
  7. Serve hot, ladled over boiled potatoes or with bread for the gravy.

💡 Chef tips & storage

Caribou is very lean — brown it hard and don't skimp on the fat, which carries the flavour. If the meat is from an older animal, give it an extra hour of simmering; it will reward your patience.
