Potatoes, carrots and calabaza soak up the rich sauce as it cooks down. Ladled over white rice, it is the taste of a Puerto Rican Sunday.

  1. Season the beef with adobo and pepper. In a heavy pot, heat the annatto oil over medium-high heat and brown the beef in batches until deeply seared on all sides.
  2. Add the sofrito and cook 3 minutes, then stir in the tomato sauce, bay leaves, oregano and broth. Scrape up any browned bits, cover, and simmer 1 hour, until the meat begins to soften.
  3. Add the potatoes, carrots, calabaza, olives and capers, and simmer uncovered 30 to 35 minutes more, until the vegetables are tender and the sauce is thick and glossy.
  4. Discard the bay leaves, taste for salt, and serve hot over white rice.

💡 Chef tips & storage

The stew tastes even better made a day ahead, as the flavors deepen overnight. Add a splash of water if the sauce reduces too much.
