Prietas Chilenas

Prietas are the blood sausages of the Chilean countryside, a staple of the butcher’s shop and the asado table. They’re usually sold pre-cooked — you poach them gently to warm them through, then brown them until the casings are crisp and serve them with pebre, lemon, and warm bread.

A country-market classic, crisped and tangy

The casing turns crackly and dark while the inside stays soft, rich, and gently spiced with onion and paprika. Squeezed with lemon and piled onto bread with pebre, they’re salty, tangy, and deeply satisfying.

Step by stepInstructions

  1. Bring the water to a gentle simmer in a wide pot with the onion and bay leaves, add the prietas, and poach for 10 to 15 minutes to warm them through without letting the water boil.
  2. Drain the sausages, pat them completely dry, and let them rest 5 minutes.
  3. Heat the oil in a skillet over medium heat and brown the prietas for 6 to 8 minutes, turning often, until the casings are dark and crisp.
  4. Slice into rounds and serve immediately with pebre, lemon wedges, and crusty bread.

💡 Chef tips & storage

Poach gently — boiling can burst the casings — and dry the sausages well before frying so they crisp instead of steam. If prietas are unavailable, any good-quality blood sausage works; serve hot, they're best straight from the pan.
