A traditional Panamanian dish — Ceviche Panameño is the pride of Panama’s Pacific coast, where fresh corvina is bathed in lime until it turns milky white and ‘cooks’ in the citrus. What makes the Panamanian version special is its wet, soupy style, with plenty of lime juice, sliced onion and culantro, all sparked by a sliver of ají chombo. It is served ice cold in a glass with soda crackers, as much a Friday tradition as it is a beach staple.

Step by stepInstructions
- Place the fish cubes in a glass or ceramic bowl and cover with the lime juice, making sure the fish is fully submerged; add more juice if needed.
- Stir in the onion, culantro, ají chombo, salt and pepper; cover and refrigerate for at least 30 minutes, up to 2 hours, until the fish is opaque and firm.
- Stir in the chopped tomato and taste; adjust the salt and lime.
- Serve very cold in tall glasses or bowls with soda crackers on the side for scooping.
💡 Chef tips & storage
Use only sushi-grade fresh fish and marinate just until it turns opaque — over-marinating makes it tough. Add the tomato right before serving so it does not water down the ceviche.
