Ceviche is Peru’s national dish, born on the northern beaches where fishermen would marinate their catch in lime juice with chile and onion right on the boat. It is bright, citrusy, and addictive, and the ‘leche de tigre’ — the citrusy marinade left in the bowl — is treasured as a drink and a hangover cure.
