Tian shui mian, or sweet water noodles, is one of Chengdu’s most ingenious snacks: thick, chewy noodles in a sauce that is sweet first and spicy second. It sounds like a contradiction, but the combination of brown sugar, chili oil, and garlic is unexpectedly perfect. The dish is served at room temperature in the classic shops, which keeps the noodles chewy, and the original version uses hand-pulled noodles, though thick fresh wheat noodles work beautifully at home.

The sauce is reduced until it turns glossy and almost syrupy, clinging to the thick noodles like caramel. The sweetness mellows the chili heat, the garlic keeps things savory, and the result is a noodle dish unlike any other. A sprinkle of toasted sesame and scallions adds color and a final layer of fragrance, and once you have tried it, you will understand why Chengdu treats it as a local treasure, and it makes a wonderful lunch that needs nothing else at all.
