  1. Combine the chicken, broth, onion, carrots, celery, garlic, and thyme in a large pot.
  2. Bring to a boil, then reduce to a simmer and cook 20 minutes until the chicken is cooked through.
  3. Remove the chicken, shred it, and return it to the pot.
  4. Add the rice and simmer 15-18 minutes until tender.
  5. Season with salt and pepper.
  6. Garnish with parsley and serve.
