Okroshka

Okroshka is summer in a bowl — a cold soup of diced potatoes, eggs, cucumber, and ham swimming in tangy kvass, finished with a snowy dollop of sour cream. It is the answer to sweltering days when hot soup is unthinkable.

Chilled thoroughly and served with fresh herbs and mustard stirred in, okroshka is a beloved warm-weather tradition across Russia. Every family tunes the balance of sour and savory to their own taste.

Step by stepInstructions

  1. Combine the potatoes, eggs, cucumbers, radishes, ham, and green onions in a large bowl.
  2. Whisk the sour cream with the mustard and a little kvass until smooth.
  3. Stir the dressing into the vegetables, then pour in the remaining kvass.
  4. Season with salt, scatter with dill, and chill at least 1 hour.
  5. Serve ice cold, with extra sour cream if you like.

💡 Chef tips & storage

Okroshka must be served properly chilled — pop the bowls in the freezer for 10 minutes before serving. Taste before salting, since kvass and ham both bring salt.
