Pork simmered low and slow in a tangy, herbaceous green chile and tomatillo sauce until fork-tender.

Green chile, slow-cooked

Pork shoulder braised with roasted green chiles and tomatillos — bright, tangy, and gently spicy, perfect over rice or in burritos.

Step by stepInstructions

  1. Season the pork with salt and pepper. Heat the oil in a Dutch oven and brown the pork in batches; remove.
  2. Cook the onion in the same pot until soft; add the garlic and cook 1 minute.
  3. Add the tomatillos and cook 5 minutes until they soften; stir in the green chiles, cumin, and oregano.
  4. Return the pork, add the broth, cover, and simmer 2 hours, until the pork is tender.
  5. Uncover and simmer 20 minutes more to thicken. Stir in the cilantro and serve with rice and tortillas.

Roast the chiles over a flame and peel them for the deepest flavor. It's even better the next day — the flavors settle in.
