An omelette that hugs a mountain of fries

The magic is the contrast: crisp, salty fries inside a soft, eggy blanket, with a golden, almost fried crust on the outside. It is silly, indulgent, and completely wonderful, the kind of food that makes everyone at the table smile. Cook it in one big pan and cut it like a pizza, or make small individual omelettes. Either way, hot sauce is not optional, and seconds usually are.

Step by stepInstructions

  1. Heat the oil in a deep skillet to 350°F and fry the potatoes in batches until golden and crisp, about 6 to 8 minutes. Drain on paper towels and sprinkle with half the salt.
  2. Whisk the eggs with the water, remaining salt, pepper, and cilantro.
  3. Heat a small nonstick skillet over medium heat with a little of the frying oil.
  4. Pour in half the eggs and scatter with onion, tomato, and a generous pile of fries.
  5. As the eggs set, gently fold the edges over the fries to form a thick omelette.
  6. Flip carefully and cook 1 minute more, until golden and set.
  7. Slide onto a plate, cut into wedges, and serve with hot sauce and kachumbari. Repeat with the remaining eggs and fries.

💡 Chef tips & storage

Keep the fries crisp and the eggs slightly soft; the contrast is everything. A second nonstick pan lets you make both omelettes at once.
