A flavorful Dominican fusion classic — Chofán is the Dominican Republic’s love letter to Chinese fried rice, born from the Chinese immigration that shaped the island’s comida china. It is the same comforting idea — rice, protein, eggs and soy — with a Dominican accent: sazón, sofrito, and a hit of garlic and ginger. Served alongside crispy fried chicken at the local chino restaurant or made at home, it is the perfect weeknight pan of flavor.

Step by stepInstructions

  1. Heat 1 tablespoon of the oil in a large wok or skillet over high heat. Scramble the beaten eggs until just set, remove, and set aside.
  2. Add the remaining oil to the wok and stir-fry the chicken and Chinese sausage until the chicken is golden and cooked through, about 4 minutes.
  3. Add the garlic, ginger and vegetables and stir-fry for 2 minutes, until fragrant but still crisp.
  4. Add the chilled rice, breaking up any clumps with your spatula, and toss constantly until the grains are hot and coated in the pan's flavors.
  5. Season with the soy sauce, oyster sauce, if using, and sazón, and keep tossing until the rice is evenly colored, about 3 minutes.
  6. Fold in the scrambled eggs and scallions, toss once more, and serve hot.

💡 Chef tips & storage

Cold, day-old rice is the secret to chofán that doesn't clump — fresh rice turns sticky in the wok. If your rice is fresh, spread it on a tray and chill it in the freezer for 15 minutes before frying.
