Choripán

Choripán — chorizo plus pan — is the snack of stadiums, markets, and asado warm-ups. It is simple to the point of genius: a well-grilled sausage, good bread, and the herby punch of chimichurri.

The sausage is snappy and smoky with a juicy, paprika-red center, and the chimichurri cuts through with vinegar, garlic, and fresh parsley. The crusty bread soaks up every last drop of juice — messy, and exactly right.

Step by stepInstructions

  1. Make the chimichurri: stir together the parsley, garlic, oregano, olive oil, vinegar, chili flakes, and salt in a bowl and let it sit for 30 minutes.
  2. Grill the chorizos over medium coals or a medium grill, turning every 3 to 4 minutes for 15 to 20 minutes, until deeply browned and cooked through to 165°F in the center.
  3. In the last 2 minutes, toast the rolls cut-side down on the grill until lightly charred.
  4. Spoon a generous layer of chimichurri onto both cut sides of each roll.
  5. Tuck a chorizo into each roll, press gently, and serve immediately while the sausage is still sizzling.

💡 Chef tips & storage

Don't prick the chorizos — the juices are the flavor, and they keep the sausage moist. Assemble choripanes as you go; soggy bread is the only way to ruin them.
