Chouriço Assado is a celebration of smoke and fire — Portuguese chouriço sausage grilled, flambéed or roasted until the casing blisters and the fat renders into something almost caramelized. It is more ritual than recipe, a scent that pulls people toward the table.
Often cooked tableside in clay bowls doused with aguardente and set alight, it turns dinner into theater. Serve it sliced on rustic bread with olives and pickled peppers as a starter, or alongside a hearty main — it disappears quickly either way.
