Cioppino-style grilled salmon brings the flavors of the classic San Francisco seafood stew to the grill — salmon fillets grilled over a bed of fennel and tomato, finished with white wine, garlic, and herbs. It’s a whole cioppino moment on one plate.

Step by stepInstructions

  1. Marinate the salmon in 2 tbsp oil, garlic, lemon juice, salt, and pepper for 15 minutes.
  2. Toss the fennel and tomatoes with 1 tbsp oil and spread on a sheet pan or grill basket.
  3. Grill the vegetables over medium heat 8 minutes, then push to the cooler side and pour the wine over them.
  4. Sear the salmon skin-side down over high heat 4 minutes, then flip and move over the vegetables. Cover and cook 4-6 minutes more.
  5. Finish with parsley and chile flakes. Serve the salmon over the vegetables.

Set up a two-zone grill — sear the salmon over high heat, then finish it over the vegetables. The salmon is done when it flakes easily.
