A traditional Yucatecan dish — Codzitos are rolled, fried tortillas stuffed with shredded turkey or chicken, the Yucatán’s answer to flautas. Crisp golden cylinders are lined up under a ladle of tomato sauce, crema and avocado. In Mérida they are a beloved antojito, eaten with the fingers and a cold drink.

Step by stepInstructions
- Simmer the tomatoes, onion and garlic in the oil for 10 minutes, blend smooth and season; keep warm.
- Warm the tortillas on a comal or in the microwave until pliable.
- Place a spoonful of shredded turkey down the center of each tortilla, roll it tightly into a cylinder, and secure it with a toothpick.
- Heat ½ inch (1 cm) of oil in a skillet and fry the rolls, seam side down first, turning until golden and crisp all over.
- Drain on paper towels and remove the toothpicks.
- Arrange the codzitos on a platter, bathe them in the tomato sauce, and finish with crema, avocado, pickled onions and habanero salsa.
💡 Chef tips & storage
Warm tortillas roll without cracking — a cold tortilla is a broken codzito. Serve immediately, before the sauce softens the crisp shells.
