The completo is Chile’s beloved street-food hot dog, and the Italiano is its most iconic version — so named for the green, white, and red of the Italian flag. A soft bun holds a boiled sausage under layers of mashed avocado, tomato, and mayonnaise, in that exact order.

The avocado is cool and creamy, the tomato bright and juicy, and the mayo ties it all together around a snappy, savory sausage. It’s messy by design, eaten with a fork and knife or with total commitment.

Step by stepInstructions

  1. Boil the hot dogs in simmering water for 5 minutes, or griddle them until browned and blistered.
  2. Toast the buns lightly in a dry skillet or toaster oven until warm and slightly crisp at the edges.
  3. Season the mashed avocado with salt and pepper and spread it generously along the inside of each bun.
  4. Nestle a hot dog into each bun, pile the diced tomato on top, and finish with a generous layer of mayonnaise; serve immediately.
