Embutido is the Filipino celebration meatloaf, a distant cousin of the Spanish embutido that became something gloriously its own. Ground pork is seasoned with raisins, cheese, and vegetables, wrapped around sausage, hot dogs, and hard-boiled eggs, then rolled in foil and steamed until firm. It is the dish that fills the house with promise as it steams — everyone knows something good is coming — and a platter of sliced embutido is the sign that a celebration is truly underway.

A hidden-treasure loaf, slice after slice

Every slice reveals the surprise inside: a pinwheel of sausage and egg framed by juicy, savory pork studded with sweet raisins and melty cheese. Steaming keeps the meatloaf exceptionally moist, while the breadcrumbs hold everything together just right. It is festive and filling, and it slices cleanly, which makes the platter look as good as it tastes — leftover slices make incredible sandwiches the next day, if there are any left.

  1. In a large bowl, combine the ground pork, breadcrumbs, eggs, raisins, cheese, carrots, onion, garlic, soy sauce, pepper, and salt. Mix until well blended.
  2. Lay out a large sheet of aluminum foil and shape half the meat mixture into a rectangle on it, about 1/2 inch thick.
  3. Arrange the hot dogs and hard-boiled eggs lengthwise down the center, then top with the remaining meat, sealing the filling inside.
  4. Roll the foil around the log tightly, twisting the ends like a candy wrapper to seal.
  5. Place the wrapped log in a steamer or large pot with a rack and steam over simmering water for 50 to 60 minutes, until cooked through.
  6. Let rest for 10 minutes, unwrap, and slice into rounds. Serve warm with tomato sauce on the side.

💡 Chef tips & storage

Let the embutido cool for 10 minutes before slicing so it holds its shape. Cooked logs freeze beautifully — wrap in foil and reheat in a steamer or microwave.
