Step by stepInstructions

  1. Drain the soaked chickpeas well and pat dry with paper towels.
  2. Pulse the chickpeas, onion, garlic, parsley, and cilantro in a food processor until the mixture is finely ground but not pasty, scraping down the sides as needed.
  3. Stir in the cumin, coriander, cayenne, salt, pepper, and baking soda. The mixture should hold together when squeezed; add flour a spoonful at a time if it seems wet.
  4. Cover and chill the mixture for 30 minutes so the patties hold their shape.
  5. Shape into 1 1/2-inch balls or patties, pressing firmly.
  6. Heat the oil in a deep pot to 350°F. Fry the falafel in batches, turning once, until deep golden brown and cooked through, 3 to 4 minutes.
  7. Drain on paper towels and serve hot in pita with hummus, tahini, and Israeli salad.

💡 Chef tips & storage

Soak the chickpeas overnight and never use canned ones — they are too soft and the falafel will fall apart. Keep the oil at 350°F and fry in small batches for crisp, tender centers.
