Fiakergulasch is named for Vienna’s Fiakern — the coachmen of old horse-drawn cabs — who wanted a meal hearty enough for long nights on the rank. It’s classic Wiener Gulasch, but crowned with a golden fried egg, a sliced frankfurter, and gherkins, served with bread or potato pancakes.

Step by stepInstructions

  1. Heat the lard in a heavy pot and cook the onions over medium-low heat 15-20 minutes until soft and golden.
  2. Add the beef and brown 5 minutes. Stir in the paprika, tomato paste, garlic, caraway, marjoram, salt, and pepper; cook 1 minute.
  3. Deglaze with the vinegar, add the broth, and simmer covered over low heat 1 1/2 to 2 hours, until the beef is tender. Stir in the sugar.
  4. Just before serving, warm the frankfurters in a skillet and fry the eggs in butter to your liking.
  5. Ladle the goulash into deep bowls and top each with a frankfurter, a fried egg, and gherkins. Serve with crusty bread.

The goulash itself is the same slow-simmered Viennese classic — the toppings are the fun part. Serve it in deep bowls so the egg yolk runs into the gravy.
