Cassava, or tavioka, is a staple of the Fijian diet, and this baked pudding is one of its most beloved transformations. Traditionally cooked in the earth oven at village gatherings, it is now just as likely to appear in home ovens across the islands.
What makes it great: the pudding emerges golden and glossy, dense and slightly chewy, with the coconut cream caramelizing into a sweet, nutty crust. It is best eaten warm, cut into thick squares, with a cup of tea or a scoop of ice cream.
