The name says fish, but there is no fish anywhere near this dish. Yuxiang refers to the sauce traditionally used for fish in Sichuan home cooking, and its mix of pickled chilies, garlic, ginger, vinegar, and sugar has become a flavor category of its own. Restaurants even serve yuxiang pork, yuxiang chicken, and yuxiang eggplant, all from the same beloved sauce, and in Sichuan homes it is one of the first dishes children learn to love.

The famous fish sauce that never sees a fish

Eggplant is the perfect sponge for that glossy sauce, turning silky on the outside while the vinegar cuts through the sweetness and the chilies add a warm glow. It is one of those vegetable dishes that even confirmed meat lovers ask for seconds of, and it makes a full dinner with nothing but rice. Look for the long, slim Chinese eggplant for the most authentic texture, and do not be shy about making extra sauce, it keeps well.

  1. Toss the eggplant with 1 tsp salt and let it sit for 15 minutes, then pat dry with paper towels.
  2. In a small bowl, stir together the soy sauce, vinegar, sugar, wine, and cornstarch mixture.
  3. Heat 2 tbsp vegetable oil in a wok over medium-high heat. Cook the eggplant in a single layer until golden and tender, 4 to 5 minutes, then transfer to a plate.
  4. Add the remaining 1 tbsp oil to the wok with the chili paste, garlic, ginger, and scallion whites, and stir-fry for 30 seconds until fragrant.
  5. Return the eggplant to the wok, pour in the sauce, and toss until the glaze coats every piece, about 2 minutes.
  6. Scatter with the scallion greens and serve with steamed rice.

💡 Chef tips & storage

Salt the eggplant cubes for 15 minutes and pat them dry before cooking, which keeps them from soaking up too much oil. Use Chinese or Japanese eggplant if you can find it; the skin is thin and the flesh cooks fast.
