The undisputed king of Swiss comfort food: a bubbling pot of Gruyère and Emmental melted with white wine and garlic, enriched with a splash of kirsch. Dunking crusty bread into that glossy, stringy swirl is a ritual worth every second.

Fondue is a social meal by design—gathered around one pot, one fork each, no double-dipping. Serve with bread cubes, potatoes, and plenty of cold white wine or tea.

Step by stepInstructions

  1. Rub the inside of a heavy pot or fondue pot with the cut garlic.
  2. Toss the grated cheeses with the cornstarch in a bowl.
  3. Warm the wine over medium heat until steaming but not boiling. Add the cheese by handfuls, stirring in a figure-eight motion until melted and smooth.
  4. Stir in the kirsch, nutmeg, and pepper, and simmer gently 2–3 minutes until glossy.
  5. Transfer to a fondue burner and serve with the bread cubes on long forks.

💡 Chef tips & storage

Grate the cheese fresh and keep the heat gentle—boiling makes fondue stringy and grainy. If the fondue seizes, a splash of warm wine and brisk stirring brings it back.
