Gibanica

Gibanica is a magnificent layered pastry of paper-thin phyllo, creamy white cheese, and eggs, baked until golden and puffed. Every slice pulls apart in dramatic, cheesy ribbons.

A centerpiece of Serbian and Balkan tables, gibanica is served for breakfast, holidays, and family gatherings alike. It is best enjoyed warm, with a glass of cold yogurt or buttermilk on the side.

Step by stepInstructions

  1. Preheat the oven to 375°F. Beat the cheeses, eggs, yogurt, and salt into a creamy filling.
  2. Butter a large baking dish. Brush each phyllo sheet with oil and lay half of them in the dish, letting the edges hang over the sides.
  3. Spread the filling over the phyllo, then cover with the remaining buttered sheets, tucking the overhang in.
  4. Brush the top with melted butter and bake for 40-45 minutes, until puffed and deep golden.
  5. Cool 15 minutes before slicing; serve warm.
