Gnocchi are plush little pillows of potato and flour that melt in your mouth. Tossed in browned butter with crisp sage, they’re the kind of comfort food that makes a simple weeknight feel like a special occasion.

Loved all over Italy, gnocchi are served with everything from tomato sauce to pesto. The key is a light hand with flour — the dough should be just firm enough to roll without turning the pillows heavy.

  1. Boil or bake the potatoes until tender; while still warm, peel and rice them onto a work surface.
  2. Sprinkle with the flour, salt, and nutmeg; add the egg and gently mix into a soft dough, kneading only until it comes together.
  3. Divide the dough into four pieces; roll each into a 3/4-inch rope and cut into 1-inch pillows.
  4. Roll each pillow over the tines of a fork or a gnocchi board to create ridges.
  5. Drop the gnocchi into boiling salted water and cook until they float, about 2-3 minutes; remove with a slotted spoon.
  6. Meanwhile, melt the butter in a skillet until golden and nutty, add the sage leaves, then toss in the gnocchi. Serve with Parmesan.

Work the dough as little as possible — overworking makes gnocchi tough. Test one in the water first; if it falls apart, add a little more flour to the batch.
