Silserli, petits pains levés dorés de l'Engadine

Silserli are buttery little crescent cookies from the Engadine village of Sils, crisp and delicate with a gentle vanilla fragrance. Their small, curved shape makes them irresistible with a cup of tea.

These unassuming cookies are a fine example of Alpine baking: a few simple ingredients treated with care. Dust them with powdered sugar and store them in a tin, where they keep their snap for weeks.

Step by stepInstructions

  1. Beat the butter and sugar until light and fluffy. Beat in the egg yolk, vanilla, lemon zest, and salt.
  2. Stir in the flour to form a soft dough. Wrap and chill 30 minutes.
  3. Preheat the oven to 350°F. Roll teaspoonfuls of dough into small ropes about 2 inches long and curve them into crescents.
  4. Place on parchment-lined sheets and bake 12–14 minutes until just set and pale golden at the edges—do not let them brown.
  5. Cool on the sheet 5 minutes, then dust generously with powdered sugar.

💡 Chef tips & storage

These cookies should stay pale—bake just until set so they stay tender and short. A light hand on the dough keeps them delicate.
